Italian style vegetable sauce with pork and herbs.

21g Butter, unsalted
59g Carrots, raw
291g Courgette (zucchini)
29g Garlic
221g Onion
84g Peppers, sweet, green, raw
312g Pork, fresh, loin, top loin (roasts), boneless, separable lean and fat, raw
35g Rapeseed oil (canola)
56g Red wine
3g Spices, basil, dried
1g Spices, chili powder
1g Spices, oregano, dried
1g Spices, pepper, black
1g Table salt

Chop up the veg, stick it in a big pan and sortee. Start with onions and courgettes, and then add more. Add a tin of tomatoes and plenty of herbs. Some water too.

Chop up the meat into 2cm cubes, fry it with butter and some mixed herbs.

When the meat is mostly cooked, add everything back into the main pot.

Add a squirt of red wine and simmer gently for a while.
